The holidays are about spending time with family, not hours in the kitchen.
So my hope is that is simple recipe inspires you to keep it easy and healthy this year!
Guilt-Free Thanksgiving Salad with Feta, Raspberries, & Apples
(366 Calories, 16 g Protein, 48 g Carbohydrates, 7 g Total Fat, 13 g Dietary Fiber, 517 mg Sodium)
Ingredients:
- 1 Fuji apple
- 1/2 cup of raspberries
- 1/2 cup of blackberries
- 1/4 cup crumbled reduced-fat feta (can be removed if you don’t do dairy)
- 3 cups of a prepackaged 3-lettuce blend
- 1 cup of fresh spinach
- 1/4 cup of crushed almonds
Directions:
- Crush the almonds directly in the bag you purchased them.
- Dice up the apple and don’t worry about it being all cute! Toss the apples, raspberries, and feta into your bowl.
- Throw in your lettuces and spinach.
- Add the nuts and toss everything together.
- Dressing is completely optional in my opinion. It’s not needed. But If you’d like to add a dressing, I recommend a healthy (no sugar added) raspberry vinaigrette.
